Home made cookies in the Sharpham Park Pantry |
‘Melt in mouth’ triple chocolate spelt cookies
125g of dark chocolate (minimum 70% coca solid)
150g of Sharpham Spelt flour
30g cocoa powder (sieved)
1 teaspoon bicarbonate of soda
Half a teaspoon of salt
125g butter (soft)
75g soft light brown sugar
50g white sugar
1 teaspoon of vanilla extract
1 medium egg (cold from fridge)
175g dark chocolate chips
1: preheat oven to 170 degrees/gas mark 3. Melt the 125g of dark chocolate either in microwave or in a heatproof dish over a pan of simmering water
2: Put the flour, cocoa, bicarbonate of soda and salt into a bowl
3:Cream the butter and sugar in another bowl. Add melted chocolate and mix together
4: Beat in vanilla extract and cold egg, then mix in the dry ingredients. Finally stir in chocolate chips.
5: Scoop out 12 equal-sized mounds (ice cream scoop and a palette knife are best tools for the job) place on a lined baking sheet. Cook 6cm apart. Do not flatten.
6: cook for 18 minutes, test with cake tester to make sure it comes out clean. If you pierce a chocolate chip do it again.
7: Leave to cool slightly on the baking sheet for 4-5 minutes. Then transfer to cooling rack to harden.
